Sylvia Klinger, Too Busy to Vitamin’s Hispanic Dietitian colleague has shared a delectable fish deal with.

This dish is superb as a result of no longer best is it tasty, fast and simple, however it’s also nutritious with low-fat fish and tomatoes.

Tomatoes are the key nutritional supply of lypocene that reduces chance of center illness and most cancers.

Pescado a l. a. Veracruzana – Too Busy to Vitamin

Ingredients

2 teaspoons olive oil

½ medium white onion, thinly slice

4 to six tomatoes, chopped

½ jalapeño chile, seeded, chopped

¼ cup canned diced pimentos

¼ cup inexperienced olives

¼ cup capers

2 recent thyme sprigs or ¼ teaspoon thyme

2 recent marjoram sprigs or ¼ teaspoon dried marjoram

1 laurel leaf

4 pink snapper filets or white fish

½ teaspoon salt

Pepper to style  

Preparation:

  1. In a big skillet, warmth the oil at medium warmth and cook dinner the onions till delicate. Stir within the tomatoes chile, pimentos, olives, capers and herbs. 
  2. Seasoned fish filets with salt and pepper and position over the tomato sauce. Duvet and cook dinner for approximately quarter-hour or till fish is absolutely cooked.
